From the Colli Fiorentini zone in Chianti, Uggiano has revived the ancient Governo process to make this lovely Tuscan red.
The Sangiovese grapes are harvested in late September. They are hand-picked, crushed and undergo 10-15 days’ fermentation with selected yeasts in stainless steel at 28-30°C.  And this is where the Governo process comes in –  up to 15% of the crop is left to dry for 30 days, to concentrate the sugars.  These dried grapes are then added to the freshly fermented wine. This brings about a slow refermentation lasting 4 to 5 weeks, which enhances freshness, concentration and roundness in the finished wine.
It is medium/deep in colour with a bewitching nose of cherries and violets.  On the palate it is bursting with cherries, damsons and sloes with a bitter twist at the finish, and very gentle tannins.
