This wine is sourced mainly from two vineyards in Stellenbosch, chosen because of their cooler temperatures and low yields. Harvesting is by hand and fermentation is with wild yeast using a small proportion of whole-bunch grapes, to enhance complexity and freshness. The wine is then allowed to develop in large wooden casks – foudres.
Deep purple in colour, there is an enticing nose of raspberry and a hint of vanilla. On the palate it is bursting with concentrated raspberry and blackberry fruit, yet it remains elegant and fresh with good natural acidity.
A joy to glug on its own, but a great with most meat dishes.
