Bischöfliche DOM Zero Riesling Alkoholfrei NV
The wine is sourced from some of the most legendary sites in the Mosel, Saar and Ruwer by the respected producer, Bischöfliche Weinguter Trier. It is vinified in the same manner as their best Rieslings, but then it undergoes another complex process to remove the alcohol without removing the delicate flavour of the noble Riesling varietal.
There is a vibrant, recognisably Riesling nose with hints of lime zest and apple crumble. On the palate, there are zesty flavours of lime marmalade with a trace of residual sugar, which gives weight and texture. This is balanced by a trace of spritz, and it finishes with fresh balancing acidity.
