AOP Cabardès
This is a classic Cabardès blend of Merlot 30%, Cabernet Franc 30%, Syrah 20% and Grenache 20%, with each grape variety being vinified separately before being assembled and aged in concrete vats.
It is medium/deep in colour with a vibrant cassis nose, which leads into a superb, voluptuous mouthful of blackcurrant and blackberry fruit with very little tannin and a fresh finish.
This slips down all too easily and is a perfect wine for a grilled lamb chop with Provence herbs, even better with a grilled steak and pepper sauce!

IGP Pays d’Oc
This is a new wine from Pascal, which involves scrupulously clean vinification to avoid the addition of sulphur. The result is a beautifully pure wine.
Medium purple in colour, it has a beguiling perfumed nose of wild strawberries. On the palate is bursting with soft, fresh summer fruits with a hint of mint, and good length.
A groundbreaking wine, and an eye-opener if you’ve never had a sans sulfites wine before. Think of it as an equivalent to a good Beaujolais. A red wine you can happily glug this on its own, but perfect for pasta or a pizza. It will even benefit from half an hour in the ‘fridge.
