Château Jouclary is situated about 10 km north of the ancient walled city of Carcassonne.  Cabardès is a terroir on the stony slopes of the Montagne Noire, where there is a harmonious balance between the east and west.  The climatic influences of the Mediterranean sun on one side and the fresher Altantic winds on the other side stamp their mark on the ripening of the grapes.  It is here that both Merlot and Cabernet (Atlantic), and Syrah and Grenache (Mediterranean) grow alongside each other. Careful blending and ageing of the wines allows the vigneron to obtain the best possible balance between fruit and structure, softness and complexity, and richness and elegance.

Château Jouclary Tradition  2021
AOP Cabardès
This is a classic Cabardès blend of Merlot 30%, Cabernet Franc 30%, Syrah 20% and Grenache 20%, with each grape variety being vinified separately before being assembled and aged in concrete vats.
It is medium/deep in colour with a vibrant cassis nose, which leads into a superb, voluptuous mouthful of blackcurrant and blackberry fruit with very little tannin and a fresh finish.
This slips down all too easily and is a perfect wine for a grilled lamb chop with Provence herbs, even better with a grilled steak and pepper sauce!

IGP Pays d’Oc
This is a new wine from Pascal, which involves scrupulously clean vinification to avoid the addition of sulphur. The result is a beautifully pure wine.
Medium purple in colour, it has a beguiling perfumed nose of wild strawberries. On the palate is bursting with soft, fresh summer fruits with a hint of mint, and good length.
A groundbreaking wine, and an eye-opener if you’ve never had a sans sulfites wine before. Think of it as an equivalent to a good Beaujolais.  A red wine you can happily glug this on its own, but perfect for pasta or a pizza. It will even benefit from half an hour in the ‘fridge.
