We love Provence rosés and the look-alike equivalents from Saint Chinian, but this year, we have sought out two rosés with a difference. 
From Cabardès where Aquitaine meets the Languedoc near to Carcassonne, Pascal Gianseni has crafted two beautiful rosés.  The key difference is that they feature Cabernet Franc in addition to the usual Rhône varieties.  The grapes are picked in the early hours of the morning to maintain freshness, and they then undergo a very gentle press to extract the bare minimum of colour. This is followed by a carefully controlled cold fermentation in stainless steel, which captures all the gorgeous fruit flavours.

AOP Cabardès
This is a joyous blend of Cabernet Franc 40%, Cinsault 10%, Grenache 40%, and Syrah 10%.
It is a very pale salmon pink.  On the nose, there is raspberry and blackcurrant with a hint of violets.  Redcurrant and raspberry greet you on the palate, wrapped up in a gorgeous texture. A perfect rosé for summer drinking. Delicious!

This year Pascal has crafted a new prestige rosé.  The mix of grape varieties is the same, but it is designed to reflect the terroir by using only the best grapes from specially selected parcels.
Even paler in colour, there are enticing aromas of redcurrants and white flowers.  In the mouth the wine has lovely concentration with flavours of white peach and redcurrants.  It has a more aromatic quality at the finish and great length.
Fabulous stuff, it is up there with the best of modern gastronomic rosés.  It is a perfect accompaniment for grilled peppers, goats cheese on toast, fish dishes and even Thai/Chinese food.
