These wines are great examples of how the skill of the winemaker and the site of the vineyard can use the blank canvas of the Chardonnay to produce wines with great character.

We have chosen three exceptional examples of Chardonnay from three of our favourite growers, each of whom has used a different technique, making each wine stand out head and shoulders from the crowd. High altitude vines, late night picking and temperature-controlled fermentation are just some of the tricks conjured up…

Domaine des Lauriers Chardonnay/Viognier 2019
IGP d’Oc
From our favourite Picpoul producer near Pézenas, Marc Cabrol produces a delicious Chardonnay with a difference – the judicious addition of some Viognier.
Pale lemon in colour.  On the nose there are hints of honeysuckle, which lead into a satisfying mouthful of melon and mango fruit, a creamy texture and a hint of vanilla at the finish.  Slips down a treat!

Domaine Jouclary Chardonnay 2018
IGP d’Oc
Pascal Gianseni’s vineyard is situated on the Southern slopes of the Montagne Noire. He harvests in the early hours of the morning to maintain maximum freshness.  Vinification is at a low temperature to maximise fruit flavours, and the wine is left on the lees to improve the texture and mouthfeel.  There is no oak involved, this is all about expressing the fruit and terroir.
There is an inviting smoky/toasty nose which leads into a soft mouthful of exotic peach and mango fruit, finishing with a long nutty finish.
Forget the sea of dull Chardonnays, this is everything that’s good about simple, unadulterated Chardonnay!

Domaine Girard, Chardonnay Elevé sur lies fines 2018
IGP d’Oc
Philippe Girard’s vines are in the heart of Cathar country adjacent to Limoux, at an altitude of 350 metres.
The wine is vinified in 500L barrels, of which 40% are new and 60% are 1-3 years old.  It is stirred regularly – battonage – to maximise lees contact, which in turn increases the flavour and mouth feel.  The aim is to preserve the intensity of the fruit, while adding complexity without oak flavours.
Green/lemon in colour, it has an expensive toasty nose. On the palate it has lovely mouthfeel with good concentration of juicy, ripe fruit.  There is a hint of vanilla, lovely acidity and good length.
For all the world, like a smart Saint Véran from Burgundy.
